Over 50 years ago, in the region of Ogori in Fukuoka Prefecture, there was a restaurant which for the first time in Japan used chili peppers in its tonkotsu (pork bone broth) ramen. It became famous throughout the land as “the restaurant where chili ramen was created.”

Eager to taste its ramen, people from all over Japan would come and line up outside. Unfortunately, the restaurantʼs founder became a victim of his own success. Unable to handle all the business, he became ill and, even though it would be missed, closed his restaurant.

Research into the taste of noodles, the thickness noodles best suited to the broth, the harmony between ingredients, and the balances of flavors have all been used to create our original noodles. We hope you will enjoy our straight, ultra-fine noodlesʼ body and chewy texture. The “bite” hardness of the noodles can be adjusted during the boiling process, so we can prepare them according to your taste.

Tonkotsu Broth

とんこつスープ

Our tonkotsu broth is made by boiling pork bones without using additional ingredients. Pork bones and carefully cleaned, after which they are gently boiled for an extended period of time under the diligent watchful eyes of our kitchen staff. Abundant in pork bone extract, our broth, has a powerful body, umami, and a crisp aftertaste.

The brothʼs “Tare” sauce

The recipe for our tare sauce, which is essential for our flavor, has been passed on to us with strict instructions of our founder. His relentless research into Japanese food culminated into his tare sauce with a flavor in complete harmony with tonkotsu broth, perfectly suited to the palate of the people of Japan.

Specially made spicy tare sauce

The special ingredient that makes HORINʼs ramen so unique is our Special Spicy Tare Sauce. Our founder was the first person in Japan who came up with the idea to add a spicy tare sauce to tonkotsu ramen. Using chili peppers as a base, our Special Spicy Tare Sauce gradually increases the umami taste of broth, slowly changing the taste of the ramen. Our pioneering tare sauce lets you enjoy interesting and evolving flavor changes, creating a spiciness inside your mouth that continues to develop even after you finish your meal.

We take great care not to let the flavor of our chashu pork overpower the taste of our ramen, creating a gently flavored balance between them. You will find that the meaty texture of our chashu is just right, without it being too tender or too tough.

Green Onions

We used mildly fragrant green onions that are not too strong in order to not disrupt the texture of our noodles or the flavour of our delicate broth.
